Healthy Comfort Food Recipes

Hey hey hey! Happy hump day everyone. I went into this pregnancy like I went into my pregnancy with Sophie. I thought to myself I am going to stick to my healthy eating, get up early to get my workouts in and not overdo it with the pregnancy cravings! Well I was wrong again. Pregnancy just makes me hungry. Very hungry. My usual eating of 80/20 where I eat clean 80% of the time and indulge 20% is basically now 40/60. So I am trying to recreate comfort food recipes into healthier ones as much as possible. Here are some of my favorites so far! ps I apologize that my food photos are not ‘gram worthy… that is something I will work on in the future. :)

LETTUCE TURKEY BURGER

Skip the bun with a hamburger or turkey burger and use iceberg lettuce instead! You will be surprised when it still hits the spot. I love to top it with some primal kitchen mayo & ketchup, onion and tomato! If you are still wanting some carbohydrates have some sweet potato fries as a side!

Crack Slaw

One of my good mama friends made this for me one time and I had to have the recipe because it was so good! It’s an easy one to make and the whole family will love it! I slightly modified the recipe from Skinny Points and topped it with a little bit of cheese.

Ingredients

1 lb ground beef or turkey

1 bag cole slaw mix

2 green onion

2 tsp minced garlic

3 tbsp coconut aminos

1 tbsp sesame oil

1 tsp red pepper flakes

Instructions

Cook ground beef or turkey meat on skillet. Season with salt, pepper and garlic powder.

In separate pan sauté green onion and garlic with sesame oil and coconut aminos. Add cole slaw mix when tender and add red pepper flakes if wanted. Once ground beef or turkey is done cooking add cole slaw mix to the same skillet. Stir and add more coconut aminos if needed.

TOMATO, SPINACH AND OLIVE OIL PASTA

Yummy pasta dish without the guilt or belly ache (if you are like me). Pow! Spaghetti is a favorite in our house and really tastes like the real deal. Only made out of green flour and quinoa flour this protein packed pasta is so good and really fills you up.

Ingredients

Pow! Spaghetti

Extra Virgin Olive Oil

Diced Tomato

Chopped Spinach

Minced Garlic and Garlic Powder

Lemon

Salt & Pepper

Directions

Cook pasta in separate pan for 8-10 minutes . Once pasta is almost finished saute’ tomatoes in separate pan with minced garlic and olive oil. Right before pasta is done add the spinach as it doesn’t take as long to cook. Drain pasta and add to tomato and spinach pan. Add salt, pepper, garlic powder and add a little bit more olive oil. Stir and top off with shaved lemon.

Ground Turkey and Zoodles Pasta with Cilantro Pesto Sauce

Can you tell we like pasta in our home? Some nights for dinner I will make Sophie and Kyle a pasta dish and for myself the same thing but use zoodles instead. I have found zoodles taste best when they have a protein and creamy sauce added in. My favorite sauce lately is Body Love’s Cilantro Pesto. I highly recommend the book “Body Love” if you are looking for a healthy cookbook with some information behind that style of eating. It has so many yummy recipes and such good information on how and why to live a healthy lifestyle and feel your best.

Ingredients

1 lb ground turkey

1 packet frozen zoodles

2 cups chopped fresh cilantro

2 tablespoons minced and seeded jalapeno

1 garlic clove

1/2 cup raw pistachios

1/2 cup extra-virgin olive oil

Juice of 1 lime

Pink Himalayan Salt

Directions

Saute’ skillet with coconut oil spray and add ground turkey. Season both sides with garlic powder, salt & pepper. Cook on medium heat and flip/stir once one side is browned. In a separate add frozen zoodles ( I prefer to buy frozen zoodles now as they are so much easier to cook and take way less time). Cook on medium until softened. Drain any excess water and season. I half the clinatro pesto recipe because I find that if I use the full amount some of it goes to waste. This is one of the easiest sauces to make as all you have to do is add all ingredients to food processor (I use our vitamix) and blend until you have reached desired texture. For myself I fill my bowl with loads of zoodles, add 4 oz of ground turkey and 2 tbsp of the clinatro pesto sauce. You can use the sauce as a topping the next couple of days for other meals as well!

Quinoa, Broccoli & Chicken Thigh Dish

This three ingredient dish is so good with any kind of sauce! Here I made it with the Cilantro Pesto sauce. It is also delicious with Body Love’s Roasted Garlic Cashew Cream Sauce.

Ingredients

  •  1 pound boneless and skinless chicken thighs

  • Coconut Aminos

  • Garlic powder

  • Coconut spray

  • Salt and pepper to taste

  • Frozen broccoli (frozen veggies is the way to go - keeps a lot of food from going to waste)

  • 2 cups chopped fresh cilantro

  • 2 tablespoons minced and seeded jalapeno

  • 1 garlic clove

  • 1/2 cup raw pistachios

  • 1/2 cup extra-virgin olive oil

  • Juice of 1 lime

  • Pink Himalayan Salt

Directions

You can find my chicken thigh recipe here. This is something I meal prep almost every week. I never get sick of them and they go with anything! I cook the quinoa in our instant pot (this is actually the biggest reason I love the Instant Pot so much - it really cuts down on the time it takes to make things like quinoa, which we eat a lot it). I add 1 cup quinoa, 2 cups water, salt, pepper, loads of garlic powder and a little bit of tumeric powder. All I have to do is hit the rice button and let the instant pot do it’s job! Steam the broccoli in boiling water until cooked (usually 5-7 minutes) drain the water and season (salt, pepper and garlic powder). You can use all these items for the week. Mixing the three together and adding the cilantro pesto sauce has been my favorite way to combine them!

Cauliflower Pizza

Pizza is another favorite in our house! Costco has a great frozen one with veggies on it but if you want to create your own and have it on the lighter side this one is delish!

Ingredients

Cauliflower pizza crust (I get ours from Whole Foods - they really have them anywhere now)

Tomato Sauce

Light Mozzarella Cheese

Spinach

Onion

Red Pepper

Turkey Bacon

Directions

Bake crust for recommended time and then remove to add toppings. *Cook turkey bacon before? Place back in oven and bake for an additional 10 minutes or until desired!

Lettuce Tacos

Another lettuce favorite that can still satisfy your taco cravings! I made this recipe for dinner for a week straight one time.. it never got old!

Ingredients

Romaine Lettuce

1 pound ground turkey

Chopped Tomato

Chopped Onion

Avocado

Chopped Cilantro

Light Sour Cream

Salsa

Lime Juice

Directions

Cook ground turkey on skillet. Season with salt, pepper and garlic powder. Create tacos with romaine lettuce bibbs and add desire toppings!

My all time favorite dessert is Body Love’s Freezer Fudge but here is another favorite for when I want a little extra crunch!

Ingredients

Rice Cake

2 tbsp PB2 Peanut Butter or Cocoa Powder

1 TBSP Nestle Semi Sweet Morsels

Blueberries

Directions

For the PB2 just add a little bit of water and stir together. Spread on top of rice cake and add morsels and blueberries.
